Apple, Kale, Sweet Potato Hash

This savory, sweet hash rings of fall, through and through, Save a little time by pre-chopping and cooking the sweet potato earlier in the week. To round out this meal, be sure to include protein such as a side of sausage, bacon, or over easy eggs atop the hash. Enjoy with a cup of your favorite tea or black coffee.

Ingredients

1 tbsp ghee or coconut oil (more as needed)

1/4 of a small onion, small diced

1 large sweet potato, cut into 1/4" cubes

1 small granny smith apple, peeled and cut into 1/2" cubes

1 garlic clove, or 1 TSP shallot, minced

sea salt to taste

red pepper flakes to taste

8-10 leaves of dinosaur or lacinato kale, destemmed and leaves sliced into ribbons

Directions

1Over medium heat, warm the oil in a medium-large skillet. Add the sweet potato and onion to the pan and sauté until softened, approximately 10 minutes. The sweet potatoes should be fork tender. Add the apple, garlic/shallot, red pepper flakes, and sea salt, and sauté for an additional 2-3 minutes. Add in the kale and a bit more oil. Mix and sauté for a couple more minutes until kale is gently wilted, but still bright green. Taste and adjust salt and pepper as needed.
