I'm a huge fan of whole foods, balanced meals that take less than 5 minutes to make! Some days you just need functional over fancy. Served up over a bed of fresh greens and with fresh fruit on the side makes this a lovely summer lunch.
1 avocado
10 canned wild caught tuna, drained
0.50 tsp sea salt
black pepper or red pepper flakes, to taste
0.25 cup chopped fresh parsley and basil (optional)
juice of 1 lime or lemon

In a medium-size bowl, scoop out the avocado and smash with a fork.

Combine all remaining ingredients and mix until creamy.

Serve over a bed of arugula and with a side of sliced plums and cherries or other seasonal fruit.
