Sweet potato fries are very much a whole food, just roasted like any other vegetable! Prepared this way, it's a fantastic starch side dish to a balanced meal. Keep it classic with sea salt and pepper, or have a little fun with the spice combination. Parchment paper is preferred to aluminum foil and lends itself to a crisper fry and minimizes our exposure to aluminum.

4large sweet potatoes
4tbspolive oil, avocado oil, or melted coconut oil
0.50tspsea salt
black pepper, to taste
optional: spices to taste, such as smoked paprika, cumin, garlic powder, onion powder

Pre-heat oven to 400F.

Meanwhile, rinse off and peel potatoes (or keep skin on for more rustic fries). Slice into 1/4" thick slabs and then cut into matchsticks to make fries.

Place fries in a large mixing bowl and toss with oil and spices to evenly coat.

Spread out evenly on a parchment paper-lined baking sheet and bake for 25-30 minutes until fries are crispy and browned. Flip the fries half way into cooking.
